Dynamic Kitchen Engine

Heritage Grain Hydration & Starch Calculator

Custom algorithmic tool calculating required stock volume, simmering windows, and starch physics based on dry weight portions.

Adjust Input Parameters

Note on Evaporation Rates: Calculations presume standard enclosed stovetop cookery. For wide-surface open pans (e.g., Valencian paellera), an additional 15% liquid buffer is automatically factored in.

Spanish Bomba

Required Liquid Volume: 900 ml stock
Optimal Simmer Duration: 18-20 mins
Technique & Vessel: Simmer uncovered (Paella pan)
Starch Matrix & Texture: High Starch Amylopectin

The Molecular Basis: Amylose vs. Amylopectin

Every rice grain’s culinary behavior is dictated by its ratio of two glucose polymers: linear Amylose and highly branched Amylopectin.

High-Amylose Grains (22% - 28%)

Found in Basmati, long-grain Indica rices, and parboiled varieties. High amylose rices absorb copious liquid without leaking sticky matrix, resulting in separate, fluffy grains that stay firm upon cooling.

High-Amylopectin Grains (80% - 100%)

Found in Japanese short-grain (Japonica), glutinous sweet rices, and Risotto cultivars. When heated in water, amylopectin branches swell rapidly and dissolve into a velvety, sticky gel.
